Easy Instant Pot Cowboy Lasagna

Check out this easy, kid and large family friendly meal that costs less than $10 to make! We love Cowboy Lasagna (original recipe from: Peppermint Mocha Mama) and we also love our Instant Pot, so we decided to adapt our version of Cowboy Lasagna to make it in the Instant Pot.

 

Our 5-year old loves this recipe and dubbed it “peach mango”, which has absolutely nothing to do with the ingredients except that we often serve Cowboy Lasagna with fruit cocktail!

 

Don’t have an Instant Pot! Why not?! The Instant Pot has been a game changer for my family. I’ve never been so happy with a kitchen appliance before. Some meals take less than 5-minutes to make like my family’s favorite Chicken Tacos.

Instant Pot Cowboy Lasagna

Instant Pot Cowboy Lasagna

This instant pot cowboy lasagna meal is so easy to make that my kids can make it! The best part is that it costs less than $10 to feed a family of 7 (with leftovers too) including some pretty picky eaters!

Prep Time 10 minutes
Cook Time 15 minutes
Total Time 25 minutes

Ingredients

  • 1 lb ground beef
  • 1 can condensed tomato soup
  • 1/2 tbsp Worcestershire sauce
  • 3 tsp ground mustard
  • 1 can mixed vegetables
  • 20 oz package of tater tots
  • 2 cups water
  • 2 cups mozzarella cheese, shredded

Instructions

  1. Use saute function to brown beef in Instant Pot
  2. Add ground mustard, tomato soup, and Worcestershire sauce and mix well
  3. Add mixed vegetables and water. Mix.
  4. Top with tater tots
  5. Set instant pot to low pressure for 10 minutes
  6. Quick release lid and mix in mozzarella cheese

Notes

We also like to mix in the tater tots as well and add an additional layer at the top of the pot.

Be sure to remember the 2 cups of water. This is necessary for the Instant Pot to create pressure and not give you the "burn" warning.
